Soak beans in water over night or use quick soak method described
below. When ready to cook, add onion, celery, bell pepper, garlic, and ham or
drippings. Bring to a boil and simmer about 2 hours until beans get soft and start
to thicken in the bottom. Add sausage and desired seasonings during the last 30
minutes. Serve with hot fluffy rice and a green salad. If desired, garnish with grated sharp cheddar cheese and chopped green onions and serve with jalapeno corn bread or French bread as they do at Treebeard's or try my Chili Corn Muffins. Serves approximately 4-6. Note: When I made this recipe, I doubled the celery and garlic cloves and I used ALL the optional ingredients. Definitely serve with cheddar cheese and onions! Quick Soak Method: Cover beans with water, bring to a boil and boil 2 minutes. Cover, turn off heat and let soak 1 hour. |
