Luscious Banana Cake

3/4cupshortening
1-1/2cupssugar
1cupmashed bananas
1/2cupbuttermilk or sour milk
1teaspoonvanilla
2eggs
1/2teaspoonsalt
2cupssifted cake flour
1teaspoonsoda
1teaspoonbaking powder
1/2cupchopped pecans

Cream together shortening and sugar until fluffy. Add eggs; beat 2 minutes at medium speed. Add mashed bananas and beat two minutes. Sift together dry ingredients; add to creamed mixture along with buttermilk and vanilla. Beat two minutes and stir in nuts.

Pour into a greased and floured pan and bake at 350 degrees until brown, or until a toothpick inserted in center of cake comes out clean (approximately 50 minutes).

Frost with ready made "Sour Cream Frosting" or "Cream Cheese Frosting" and sprinkle with pecans... yum... yum... yum!
